After rehearsing several weeks on the show "Picnic," I started to crave colorful blankets, warm weather, and delicious snacks. In order to commemorate opening weekend we drove to Sausalito to soak in beautiful views of San Francisco, salty water, and bobbing white sail boats. While there we picked up two gently used le creuset pans, pranced up and down cobbled streets, and peered in little shops filled with chocolates or antiques. We nestled in on several steps and munched on carrots, crostinis, BGT salad, and hummus. Our little fluff ball came along for the seaside stroll all the while hoping for picnic crumbs.
Packing a zero-waste picnic proved to be simple, even with my dwindling pantry. Shopping day is just around the corner, and it’s a good thing stale bread has so many uses. Since I store everything in jars anyway, it was simple to throw them in the basket. With a couple of napkins and some silverware, we packed up and drove past rolling hills and bright blue waves. We filled my klean kanteen with water and a 32 oz mason jar just in case we ran out. Justin mentioned the only thing missing was champagne. If anyone finds champagne on tap, let me know. I’ll be there.
Crostinis:
1 loaf of stale bread
3 tablespoons of olive oil
Salt & Pepper
Run the loaf under running water. Place in the microwave for 30 seconds. The water will create steam temporarily loosening up your bread for thin, non-crumbly slices. Slice the bread a little thinner than ¼ of an inch. Place separated on a baking sheet and drizzle with olive oil. Bake at 450 for 5 – 8 minutes. Keep an eye on them to make sure they don’t burn.
BGT Salad:
Stands for Bacon, Goat Cheese, and Tomato
2 medium sized roma tomatoes
¼ cup of goat cheese
4 Slices of bacon
1 teaspoon chopped fresh cilantro or basil
*I’ve been unable to find goat cheese in bulk. I’ve been making my own type of goat cheese (recipe to come)
While the bacon is frying, cut the tomatoes into medium chunks and put at the bottom of the jar. Mix the cheese and herbs for the second layer. Then add the crunchy bacon on top.
